Its Menu Planning Monday!!

Edited to add: For those of you who read this post earlier today, I've added the French Onion Soup recipe and a pretty cool link at the bottom! Happy Eating!




I was going to post that cute little smiley face banner from orgjunkie but I couldn't get blogger to do it right, so for now, you will just have to live without it! (I know, your day will not be complete)

We've done really good around here sticking to the plan. I am so happy to tell you all that not only are we eating better, but we are saving money as well. How could I ask for more? Using the crock pot more has been a real time saver. I'm not stressed at five o'clock! Gotta love that!

So here's the plan for the week at the Mc house. Click here for more menu plans.

Monday - Leftovers and baked potatoes. ( I slow cooked some ribs this weekend and we had plenty leftover so we will have those with some baked potatoes.)

Tuesday - Applesauce chicken with green beans and scalloped potatoes
(I have some leftover applesauce from making it in the crock pot)

Wednesday - Leftovers

Thursday - Crock pot shepard's pie

Friday - Leftovers

Saturday - Hubby grills ( he just doesn't know it yet)

Sunday - Leftovers or out to eat ( I'm leaning toward leftovers though)

Also this week I'll be making more pumpkin muffins because they were such a hit. I'm going to try to make broccoli casserole in the crock pot, and the French Onion Soup** that was in "Everyday with Rachel Ray" magazine this month. It sounds really easy and only has like 5 ingredients. I used to have a subscription but I hardly ever made any of the recipe and I was getting too many magazines as it was so I decided to cut that one out. Sorry Rach! But, I bought this months because of something listed on the cover (but I can't remember what).

French Onion Soup (Courtesy Everyday with Rachael Ray)
2 large sweet onions, thinly sliced
1 cup dry red wine
2 (14.5 oz.) cans beef broth
1 (5 oz.) bag seasoned croutons (about 2 cups)
4 thick slices Swiss cheeses (If you don't like Swiss you could always substitute provolone and both are available in sliced form at Aldi)

In a deep skillet, heat 2 tbls. extra virgin olive oil over medium heat. Add the onions and cook, stirring occasionally, until translucent and softened, about 15 minutes. Add the wine and bring to a boil. Pour in the beef broth, lower the heat to low and simmer for 10 minutes; season with pepper. Preheat the broiler. Divide the soup among 4 oven-proof bowls, then top each with one-quarter of the croutons and slice of cheese. Set the bowls on a rimmed baking sheet and broil until the cheese is bubbly and golden, about 1 minute.

Also, last but not least, check out one bag, five dinners. Sounds pretty easy to me!

Of course I want the onion soup recipe...yummy!!! I don't have my plan up this week...but I have ribs in the crockpot for tonight...yummy:) Those pumpkin muffins are the BEST...Kayla ate 6 or more yesterday!!! I didn't care because really they are pretty healthy compared to other junk she could be eating. Hayden ate two himself. Several people in Sunday School loved them:) I am going to try another recipe for muffins soon using frozen orange juice...another way to get some vitamins in my children:)

Yeah for the kids eating muffins Jen! I'm the same way! I will let them make themselves sick as long as what they are getting sick on is healthy! That frozen orange juice muffin recipe sounds good, be sure to post it. We really like muffins around here!

Ugh...crockpot disaster tonight! The ribs burned to a crisp...my crockpot cooks fast...what a waste...I was so mad that I didn't want to cook dinner so Ken stopped at got a rotisserie chicken from Publix...so much for saving money and eating at the house!

Oh no! Sorry Jen! If you go to Crock Pot 365 and look on her right sidebar, she has an article listed that says "Help! my crock pot cooks too fast!". You might could find out the reason it does that!
