Better late than never!!!

This is for Rachael, who right at this very moment (since it's 4:30) is probably mad at me because this is what she is supposed to be making for dinner tonight and she was counting on me to post the recipe. I have good excuses, really, I do. Yesterday was super busy day around here and Hub's nephew from California is in town and we all went out to eat with him (when I made my menu plan on Monday, I didn't know he was coming in, so that means that the leftovers from Monday are what we are eating tonight!) Then at 2 a.m. this morning the stomach virus decides to invade our home. Luckily it's not me (and really folks, I would much rather me be sick than one of my babies, but we all know that there is no one to take care of Mama when she is sick and with the terribly busy week I can not afford to be sick!), its our 7 year old. Bless her little heart, she has been so pitiful today and has wanted me to be beside her all day. So, here is the recipe and I hope Rachael sees it in time to make it for dinner!

Meia's Crock Pot Stroganoff
1.5 lbs. stew meat, cubed
1 can cream of mushroom soup
2 Tbsp. onion soup mix

Mix all together and throw in crock pot until beef is done! Great over egg noodles or rice!

Are you kidding me...that is all it takes??!! EASY...and sounds YUMMY! I will have to make this...sorry EC is sick:( I hope she feels better soon!

I do the same thing, but do it in the oven, on low for 4-6 hours and then mix in low fat sour cream toward the end. Also, Cream of Chicken soup works just as well...I am not a big mushroom fan. I will have to try it in the crock pot, because we don't leave the oven on if we are not home.

Hope EC is better soon.

That's it? Sounds very easy! Yet, I don't think it'd work the same vegetarian. Thanks for posting for me! Yes, better late than never! :)

I tried a different recipe and it worked great. I'll post it later today.
