Hey Good Lookin....

I've been cookin up a storm lately! Blame it on that funny chick over at Crock Pot 365. She totally inspired me to get out my dusty old crock-pot and put it to good use! Before this past week my crock pot and I were just acquaintances. You know, that friend you see once or twice a year. You know their name, and maybe a few random facts about their lives, but for some reason you've never delved into a deep friendship. Well, this week the crock pot became my best friend. It was totally out of necessity people! Second grade has thrown us all for a loop at this house. EC has had around 2 hours of homework every night! Sheesh! When 5 o'clock rolled around on Monday with no dinner prepared I was stressed! So, I did what any good mom would do in my situation, I made junk for dinner. Yep, my usual "we need to have a balanced dinner, with plenty of veggies, limited carbs and some protein" self went into just plain ol' survival mode. I hated it. That night I vowed that I would never let that happen again if I could help it. I decided that the crock pot was the way to go. The main course would go in sometime in the morning or early afternoon and I could steam some veggies as sides to go with it! I am here to tell you that I cooked supper every night this week, in the crock pot! I made this, this, and this. It all got rave reviews and we all had full bellies. (sigh) and all was well in the kingdom....
